摘要
大曲是白酒生产的动力,在白酒酿造过程中起着重要的糖化、发酵、生香的作用。在大曲培养中能看到的茵丝基本上都属于霉菌。采用土豆培养基进行纯种培养,选取长有2~4个单菌落的平板进行分离纯化,得到纯种培养茵。通过茵落形态镜检和生理生化实验对纯种培养菌进行初步分类,再用微生物自动鉴定仪对得到的不同菌株进行分类鉴定,分别是根霉属、毛霉属、曲霉属、青霉属、犁头霉属、孢霉属。
Daqu,an important production material of brewing white liquor, plays important effects on saccharification, fermentation and aroma-producing in the brewing process. In the process of mould culture,most of the mycelium which can be found belonged to mould. Using potato medium for pure culture, pure bred culture bacteria were obtained by selecting plates that contained 2-4 single colonies to be separated and purified. The bacteria was preliminarily classified by means of microscopic examination for morphology and physiochemieal experiments. Utilizing the auto-microbiological identifical system, the different strains were identified to be Rhizopus , Mucor , Aspergillus, Penicillium , Coerulea , Taeniolella ,respectively.
