四乙撑五胺的抗氧化及其金属螯合性能的研究

摘要 研究了四乙撑五胺(TEPA)在猪油和豆油中的抗氧化效果,发现一般抗氧化剂在猪油中均有明显的抗氧化作用,但比TEPA要低得多。TEPA在豆油中也有很强的抗氧化作用,菲醌的抗氧化作用也较明显,但酚型抗氧化剂和紫草的石油醚提取物(LE-pet)未显示明显抗氧化作用。2mg/kgFe3+对0.04%TEPA的抗氧化活性只有很微小的抑制作用,10mg/kgFe3+对其有很强的抑制作用,而20mg/kgFe3+使其完全失去了抗氧化活性。TEPA是很强的抗氧化剂,但又是较弱的Fe3+螯合剂。 Antioxidant activity of tetraethylenepentaamin(TEPA) in lard and in soybean oil has been investigated. It is found that traditional antioxidants in lars have obvious antioxidant activity, but much lower than that of TEPA. TEPA also shows very strong antioxidant effect in soybean oil, but phenolic antioxidants and the petroleum extract from puccoon do not demostrate any antioxidant activity in soybean oil. 2 mg/kg Ferric iron slightly ,10 mg/kg remarkably and 20 mg/kg completely depress the antioxidant activity of 0 04% TEPA.TEPA is a very strong primary antixidant,but a weak chelating reagent of ferric iron.
