摘要
对冬泡红色素的特性进行了初步探讨。结果发现，该色素为水溶性色素，最大吸收峰值为４８０ｎｍ；该色素对酸碱、紫外线、温度都较稳定；该色素的耐糖性、耐盐性、耐还原性很好，但耐氧化性较差。是一种很有开发应用价值的野生天然色素资源。
The red pigment's character of Dongpao has been analyzied in this paper,the result is the pigment can be dissolved into water and it's maximum absorption spectrum peak is at 480nm.The pigment is stable to temperature、ultraviolet ray、acid and alkali.The sugar tolerant,salt tolerant and reductive tolerant are good,but the oxidant tolerant is bad.
