摘要
食源性甲型肝炎病毒(HAV)是一种能以食物为传播载体,并经粪—口途径传播感染的致病性病毒,是人类甲型肝炎的直接致病因子。综述了HAV及其相关食品安全的研究进展,包括HAV的食源性依据,食物中病毒的检测,食源性HAV的危害,以及相关食品安全的展望。以期对这种食源性疾病得到更好的控制与防范。
The studies have shown food-borne virus HAV is a pathogenic virus that can be transmitted infected by fecal-oral route with the help of food, which is a direct causative agent of human viral hepatitis. This paper is about HAV, and its related food safety research, including food-borne virus HAV, detection of HAV in food, hazard of HAV in food and prospect about food safety. The hope is that it will make a contribution to control and prevention of food-borne disease.
