摘要
测定了多个品种的糯谷(米)的外观性状、基本成分和氨基酸组成。各品种糯米淀粉颗粒的形貌一样,多呈多角形,平均粒径45~60μm;其偏光十字清晰,交叉点位于颗粒中心而且垂直。
The apparent characteristic,main chemical composition and amiono acid composition of some varieties of glutinous rice were analyzed.Their granules,mean size from 4.5 to 6.0 μm,are polyhedral angle in majority and show same morphology.The cross-point of clear hilum is also in the middle of granules with A-type starch crystal sturcture.
