摘要
应用吹泡示功仪测定并绘制了12种小麦样品或面粉的吹泡示功图,通过分析所测参数及其与烘烤品质的关系,表明使用吹泡示功仪测定和分析小麦品质是一种较好的科学方法,它可以比较全面且直观地测定小麦面粉的强度、弹性和延伸性,从而可以推测和确定小麦品种的应用范围,对科学。
Alveograms of 12 kinds of wheat samples were drawn by Alveograph and the results showed that determination and analysis of wheat quality carried out by Alveograph was a scientific method though analyzing the relationship between parameters measured and baking quality and it can overall and object determinate the strength,elasticity and elongation of wheat flour.Then,the applied scope of wheat samples was assessed and it has some practical value to assess wheat flour quality.
