摘要
目的全面了解食品从业人员的现况。方法采用分层、随机、整群的抽样方法于2007年对北京市石景山区餐饮业食品从业人员现况进行调查。结果在被调查的372名食品从业人员中,初中学历和小学学历的占64.3%,平均工作年限为6.8年,卫生知识掌握合格率42.7%;单位食堂食品从业人员卫生知识合格率最高,餐馆饭店的最低;随着学历的增加,平均得分有明显的增加趋势。结论餐饮业食品从业人员,尤其是专职洗碗工文化程度低,卫生素质差,流动频繁;提高餐饮业就业学历门槛、降低流动性将有助于提高其卫生素质。
Objective To fully understand current status of food handlers employed at catering trade in Shijingshan, Beijing. Methods Food handlers at catering trade in Shijingshan were investigated with questionnaire by stratified, random and cluster sampling in 2007. Results Totally, 372 food handlers were investigated, 64.3 percent of them with junior high and primary schooling, with an average length of employment of 6.8 years. Their awareness of qualified health knowledge was 42.7 percent in average, with the highest in those working at canteens and the lowest in those at hotels and restaurants. Scores of awareness increased with increase in their schooling. Conclusion At present, it is more worrying about less schooling, poor hygienic quality and frequent floatation of food handlers employed at catering trade in Shijinshan. It is necessary to raise entrance threshold for vocational training of food handlers and reduce their mobility to improve their hygienic quality.
