摘要 蔬菜纸是一种以蔬菜为原料制成的纸样食品。本文以小白菜为原料,辅以可溶性淀粉为粘接剂,采用平板成膜法的方法,研究了制备蔬菜纸的最佳工艺条件。通过正交试验获得,制备白菜蔬菜纸最佳配方为0.5%CMC-Na,0.3%海藻酸钠,0.8%琼脂,3%可溶性淀粉,产品平整,易揭片,咀嚼时不粘牙;添加0.6%CMC-Na,0.4%海藻酸钠,0.6%琼脂,3%可溶性淀粉时蔬菜纸的抗拉强度最好;保质期可达6个月。 Vegetable Paper is a material made of vegetable food pattern. In this paper, as raw materials of Chinese cabbage, with soluble starch as adhesive, film-forming method using flat-panel method, the preparation of vegetables, the optimum conditions of paper. Obtained through the orthogonal test, preparation of vegetables cabbage recipe for the best paper 0.5% CMC-Na, 0.3% sodium alginate, 0.8% agar, 3% soluble starch, product formation, easy to filmy, when the non-stick chewing teeth, Add 0.6% CMC-Na, 0.4% sodium alginate, 0.6% agar, 3% soluble starch vegetables at the best tensile strength of paper,shelf-life of up to 6 months.
