摘要
本文研究了HACCP体系原理在绿茶生产中的应用,并以江西德宇集团得雨活茶生产为例,描述了该产品的特性及工艺流程,对各生产工艺进行了危害分析,确定了CCP点,制定CCP值,建立了CCP点的监视系统、纠正措施、验证程序,以及文件和记录保持系统的建立。
The apphcation of HACCP principles in green tea production has been studied in this paper, and take the DEYU vigor tea that JIANGXI DEYU Group produced as example, described the characteristic and processes of DEYU vigor tea production, carried on the harm analysis to each process of production, and determined the CCP spot, formulated the CCP values, established the CCP supervisor system, the correction measures, the verification programs, and the establishment of document and record- keeping system.
