摘要
利用配制的不同浓度的壳聚糖保鲜液对冬枣进行涂膜保鲜处理,研究了冷藏过程中冬枣贮藏品质的变化。结果表明:冬枣在冷藏时,壳聚糖涂膜处理可以有效地保持枣果的硬度和维生素C含量,抑制可溶性固形物含量和可滴定酸含量的下降,降低呼吸强度和果实转红,减少失重和腐烂率,延长冬枣的贮藏时间。其中,最佳壳聚糖保鲜液浓度为1%,处理果与对照及其他浓度处理的冬枣相比,呼吸强度最低,硬度、可滴定酸含量和Vc含量下降最缓慢,腐烂率最低。
Used different concentrations of chitosan coating on Chinese winter jujube,studied the storage quality of Chinese winter jujube under low temperature.The results showed that: in the condition of low temperature,chitosan coating can maintain firmness and the contents of Vitamin C,inhibit the decline in soluble solids content and titratable acidity content,reduce respiration rate,inhibit fruit turning red,reduce weight loss and rot rate and extend the storage time of Chinese winter jujube.The best concentration of chitosan coating on Chinese winter jujube is 1%,the Chinese winter jujube treated by 1% chitosan has the lowest respiration rate,the slowest decline in firmness,the contents of titratable acidity and Vitamin C and the lowest rot rate.
