摘要
研究了应用三点检验法感官评定火腿肠风味的方法,通过应用该方法感官评定火腿肠的风味,说明该方法能评定出火腿肠风味之间的差别,适合于火腿肠风味的感官差别检验。
Sensory evaluation method of triangle test in the sausage flavor was researched in the paper, and sausage flavor was sensory tested by this method. The result revealed that this method could evaluate the difference of sausage flavor, and be suitable for sensory evaluation in the sausage flavor.
