鱼油中含有EPA、DHA等多烯不饱和脂肪酸,具有良好的保健作用。但由于EPA、DHA有高度不饱和性,极易氧化,而且鱼油本身又带有一定腥味。直接把它作为食品强化剂有相当大的难度。本文对以TBHQ作鱼油的抗氧化剂,以海藻酸钠作囊壁材料。
