摘要
研究了L-阿拉伯糖对戚风蛋糕感官指标的影响及其对血糖正常人群食用蛋糕后血糖变化的影响,结果发现,L-阿拉伯糖对戚风蛋糕的感官有一定的改善作用,对血糖正常人群餐后血糖的升高有较强的抑制作用。
L-arabinose is a new functional sweetener. In this paper, the L-arabinose's effect on sensory index of chiffon cake and the influence on the blood sugar of the normoglgcemic people who served with the cake were studied. The results showed that the L-arabinose has some improvement on chiffon cake's sensory and control- ling postprandial blood sugar of the normoglgcemic peo- ple.
