摘要
目的:通过对家蝇幼虫(蝇蛆)的营养成分进行测定,对其营养价值做出初步评价。方法:对家蝇进行养殖,收集蝇蛆,测定蝇蛆的粗蛋白、粗脂肪、总糖、氨基酸和脂肪酸构成,维生素及微量元素含量,用粮食与农业组织-世界卫生组织(FAO-WHO)提出的参考蛋白模式评价。结果:蝇蛆粗蛋白含量为62.52%,必须氨基酸含量(色氨酸未测)占总氨基酸(E%)的47.72%,必须氨基酸与非必需氨基酸总量的比值(E/N)为0.91,E%/T为3.18,均高于参考模式的40%、0.6和3。粗脂肪含量为18.05%,亚油酸及亚麻酸等必需脂肪酸分别为24.21%和0.68%,不饱和脂肪酸含量为58.50%;总糖含量为2.87%;维生素A、D、E含量分别为727.8μg/100 g、131.0μg/100 g1、0.04 mg/100 g;Fe、Zn、Ca、Se含量分别为268 mg/kg1、59 mg/kg0、.31%8、.90 mg/kg。结论:蝇蛆各营养素含量较丰富,氨基酸模式高于参考模式,具有较高的营养价值,适于开发利用。
Objective: To evaluate the nutritional value of house fly larva by assaying its nutritional ingredients. Methods: Breed house flies(Muscae),collect larvae, assay the contents of crude protein(CP), crude fat, total sugar(carbohydrates), vitamin and mineral salt in house fly larvae and assay the composition of amino acid(AA) and fatty acid. Evaluate the house fly larvae, s nutrition based on reference protein of FAO--WHO(Food and Agricultural Organization--Word Hospital Organization). Results: Fly larvae contain 62.52 % of crude protein, and E % (Tryptophan nncontained), E/N and E %/T of house fly larvae is 47.72 %, 0.91 and 3.18, respectivecy, white are higher than those in reference pattern(40% ,0.6 and 3). House fly larvae contain18.05 % of crude fat, 24.21% of Linolenie Acid, 0.68 % of Linoleie acid, 58.50 % of unsaturated fatty acid, 2.87 of Carbohydrates, 727. 8 μg/100 g of Vitamin A, 131.0μg/100 g of Vitamin D and 10.04mg/100 g of Vitamin E. Besides, the content of Fe, Zn, Ca and Se is 268 mg/kg, 159 mg/kg, 0. 31 % and 8.90 mg/kg, respectively. Conclusion.. House fly larvae have abundant nutrients, with AA pattern higher than reference patterns. House fly larvae are of highly nutritional value and worth utilizing efficiently.
