餐饮业食品卫生安全水平2种评价方法的比较研究

Comparative Study of 2 Assessment Methods of Food Sanitation in Catering Industry

目的检验《重大活动食品卫生安全水平快速评估表》的可靠性及应用价值。方法对巴城镇21家大中型餐饮单位分别用《重大活动食品卫生安全水平快速评估表》、《餐饮业经常性卫生监督量化评分表》进行打分,对每家单位总得分进行配对t检验。结果21家餐饮单位一票否决指标及关键监督项目指标均为满分,食品卫生安全水平快速评估评分法与餐饮业经常性卫生监督量化评分法经配对t检验,P>0.05。结论2种方法一致性较强。食品卫生安全水平快速评估表更具有指标数量少、结构严谨、计算简单等优点。

[Objective]To test the reliability and application value of ＂Rapid Assessment Scale of Food Sanitation in Important Activities＂.[Methods]Totally 21 large and medium-sized catering units in Bacheng County were evaluated according to ＂Rapid Assessment Form of Food Sanitation in Important Activities＂ and ＂Quantitative Rating Scale of Regular Sanitary Supervision＂,and the total score of each unit was statistically analyzed by Paired-Samples T test.[Results]Indexes of one-vote veto and key supervision items had perfect score.Rapid assessment of food sanitation and quantitative rating method of regular sanitary supervision were tested by Paired-Samples t test,P〉0.05.[Conclusion]There is good consistence of two kinds of the assessment methods.Rapid assessment scale of food sanitation has the advantage of fewer indexes,well structure,simple calculation.
