摘要
以乙酸酐为乙酰化试剂,嘧啶作为弱碱性催化剂,对大豆脑磷脂进行乙酰化改性。通过正交试验优化反应条件:嘧啶用量为30mmol/100g·LEIF,温度为56℃,反应时间为50min,乙酸酐用量为60mmol/100g·LEIF时,脑磷脂乙酰化率(PECD)可达96.4%。对脑磷脂乙酰化之前与之后的乳化性能进行比较表明,乙酰化脑磷脂的乳化稳定性优于高脑磷脂含量的大豆磷脂。
Aeetylated phosphatiylethanolamine was synthesized by anhydride as aeetylation agent and myridine as catalyst. The optimal eondition is : temperature : 56℃, reaction time : 50 min, the amount of anhydride:60 mmol/100 g · LE1F,cat. 50 mmol/100 g · LEIF,the yield of PECD is 95.4 %. Comparation with the PECD and raw material, the emulsion ability of Pt^CD is superior than raw material.
