摘要
在进行香蕉果汁加工实验时,发现一种青霉菌可以分泌抗果汁非酶促氧化变色的某种抗氧化物质,青霉菌株No.18的总抗氧化活性最高,作为供试菌种,并研究其培养液的抗氧化活性。从青霉菌培养物中初步分离、纯化抗氧化组份,并对各个抗氧化组份的总抗氧化能力、DPPH.自由基、羟自由基和超氧阴离子清除能力进行测定。青霉菌培养液分别用石油醚、乙酸乙酯萃取后,水相经HP20大孔树脂柱层析和葡聚糖凝胶G-75柱层析,结果表明,其有效组分对DPPH.,.OH和O2-.三种自由基有较好的清除能力,且清除作用与浓度成正相关性。
The phenomenon had been noticed that penicillium in banana juices could secrete some antioxidants which had non-enzymatic oxidative discoloration activity. Strain No. 18 showed highest antioxidant activity and could be used as tested strain. Antioxidant activities of penicillium culture solution were studied. Antioxidants in penicillium culture solution were isolated, purified and detected for the total antioxidant capacity, DPPH · free radical scavenging capacity, hydroxyl radical scavenging capacity and superoxide anion removal capacity. Penicillium culture solution was extracted with ligarine and ethyl acetate respectively. The ingredients in aqueousphase were separated by the HP20 macroporous resin column chromatography and polydextran gel column chromatography G - 75. The results showed that the effective compound could scavenge DPPH·,OH· ,O2^- · in a concentration-dependent manner.
