摘要 [目的]控制影响酶促反应的因素,确定酶促反应的最佳条件,提高收率。[方法]在温度、pH值、底物浓度、反应时间等不同条件下利用植酸酶催化植酸水解,判断不同因素对水解结果影响的大小,筛选出植酸酶催化植酸水解生成肌醇的较好工艺条件。[结果]水解植酸的最佳工艺条件是:温度为37℃、pH值为5.0、底物浓度为10%、反应时间为16h。[结论]在最佳工艺条件下可以较好地生产肌醇。 [Objective] The best condition of enzymatic reaction was determined for the higher recovery rate through the research on the control of the factors affecting the enzymatic reaction.[Method] The hydrolysis of the phytic acid was catalyzed by phytase under the different conditions of temperature,pH,substrate concentration,reaction time and others.The better process condition for the inositol production through the hydrolysis of phytic acid catalyzed by phytase was selected based on the determination of the impact of different factors on the hydrolysis.[Results] The optimal process condition of the hydrolysis of phytic acid was:the temperature,37 ℃;the pH value,5.0;the substrate concentration,10% and the best reaction time,16 hours.[Conclusion] The optimum conditions may be better to produce inositol.
