摘要
介绍了活性氧(ROS)的种类、产生、代谢等相关概念及其在果实采后中的生物学效应,对果实采后贮藏过程中ROS代谢与果实衰老、病害和冷害的关系进行了重点论述,对ROS代谢调控在水果保鲜中的作用作了预测和展望,为果实采后贮藏保鲜研究提供重要的理论基础。
This paper reviewed the related concepts of the reactive oxygen species(ROS) including the varieties,generation and metabolism,as well as its biological effects in post-harvest of fruits.Moreover,the relationships among ROS metabolism,senescence,disease and chilling were discussed.We pointed out a forecast and outlook for the role ROS metabolism ragulation played during fruits storage,which provided an significant theoretical base for the post-harvest storage of fruits.
