ESR检测技术和啤酒中游离二氧化硫相关性的研究

摘要 ESR指标主要反映啤酒的抗氧化力和清除自由基的能力,国外已在实践中用其指导风味稳定性。二氧化硫是啤酒中主要抗氧化物质之一。通过2组不同的试验证明了LagTime与游离二氧化硫、品评的正相关性是建立在同一种酒基的基础上实现的。对于不同的、或差异较大酒基而言,这种相关性是不存在的。
