基于图像处理的罗汉果颜色与甜甙V关系研究

Study on the relations of color and mogroside V of siraidia grosvenrii based on image processing

利用图像处理技术提取罗汉果表皮的R、G、B、H、S、I颜色值,对罗汉果贮藏过程中的颜色变化进行了分析研究,并与实测的罗汉果甜甙V的含量值相对照,结果表明,罗汉果表面颜色随贮藏时间的变化可以间接地反映罗汉果甜甙V含量的变化情况。

Image processing technique is used in this paper to pick-up the color values of R,G,B,H,S,and I.then the change of Siraidia Grosvenrii＇s color in the process of store is studied and contrasted with the value of mogroside V.The result shows that this change can reflect indirectly the variation of mogroside V of Siraidia Grosvenrii.
