摘要
探讨了玉米醇溶蛋白薄膜对香蕉的保鲜效果。研究表明:玉米醇溶蛋白良好的保湿性及抗氧化性可使香蕉在贮存过程中的损失下降且贮存朗延长。最佳涂膜液配比为:甘油0.8ml,油酸0.6ml,虫胶0.6ml。
The effect of zein film on storage of banana was discussed. The experiments showed that zein film prevented water lossing of banana and prolonged storage because of its good moi-ture - resistant and antioxidative ability. The optimal formula of film solusion was: 0. 8ml glycerol, 0. 6ml oleic acid, and 0. 6ml shellac into 10ml 10% alcohol solusion of zein.
