It has been observed that em of phenylalanine and glycosylated phenylalanine in fluoresce spectra are 2810 nm and 440 nm, respectively, that permits to investigate the suppression of Ge132 on the Maillard reaction of phenylalanine without any interference. The result shows that the fluorescence intensity(FI) of glycosylated phenylalanine increases continuously with the decrease of FI of phenylalanine, and Ge132 exhibits a suppression on the Maillard reaction of phenylalanine up to 423%.
