Analysis on Monitoring Results of Tableware Sterilization in Turpan-Hami Oilfield from 2006 to 2008

摘要 目的了解吐哈油田餐饮具卫生状况及消毒卫生质量,探讨其影响因素,提出改进建议。方法大肠菌群快速纸片法,采样及检验按GB14934-94《食品卫生国家标准汇编》规定操作,进行检验。结果总体合格率61.60%,总体上看合格率呈逐年上升趋势,大型餐馆合格率较高,中小型餐馆合格率较低。不同类型餐饮业单位,不同类型餐具的合格率差异均有统计学意义。结论应加强餐饮业餐具消毒监管力度,采取综合措施进一步提高餐饮具消毒卫生质量。 Objective To understand the hygiene situation and disinfection quality of tableware in Turpan-Hami Oilfield,to explore its influencing factors,and to put forward an improved proposal.Methods Rapid paper strip method was used to determine fecal coliform,sampling and testing were conducted according to GB14934-94 "Compilation of National Standards of Food Hygiene".Results The overall pass rate was 61.60%,on the whole,the overall pass rate showed an upward trend year by year.Large restaurants had a higher pass rate,while small and medium restaurants had a lower pass rate.There were statistically significant differences in the pass rate of tableware sterilization among different types of catering units and different types of tableware.Conclusions It is necessary to strengthen the supervision on the tableware disinfection of restaurants,and adopt comprehensive measures for further improving the hygienic quality of tableware disinfection.
