摘要
随看生活水平的提高,人体抵抗力的减弱,食品过敏原已成为重要的食品安全隐患之一,文章综述了食品过敏原及其检测技术的研究现状。
With the improvement of living standards and the weakening of the human body resistance,the problem of food allergen become one of hidden dangers for food safety. Progress in the determination to the allergenicity of food allergen was reviewed briefly in the paper.
