摘要
本文概述了我国红薯即红薯科研、生产、加工的现状,以及下一步的发展动向,表明红薯在我国正在由粮食作物向经济作物转变,由食用型向加工型转变,特别是红薯淀粉类产品的加工是当前红薯加工的主流。
This article summarized the research, production and processing of the sweet potato as well as its development trend in China. It showed that the sweet potato is becoming from grain crop to economic crop, from food type to processing type. The current mainstream is the process of sweet potato starch.
