摘要
红薯不仅具有丰富的营养价值,而且具有很高的药用价值。对红薯营养挂面的制作工艺进行研究,结果表明其最佳配方为:食盐2.0%,鸡蛋4.0%,红薯浆20.0%,海藻酸钠0.2%。用此配方生产的产品色泽鲜艳,具有红薯特有香味、断条率低、口感良好、营养丰富。
