摘要 [目的]了解吕梁市离石区各类型餐饮业单位食(饮)具消毒情况,更好地加强餐饮业的食(饮)具消毒管理工作。[方法]对2009年离石区432户大、中、小型餐饮单位的4286份食(饮)具消毒效果监测资料进行分析。[结果]检测432户餐饮单位的食(饮)具4286份,合格的2700份,合格率为62.99%。检测合格率,大、中、小型单位分别为82.05%、75.88%、27.87%(P<0.01);蒸汽、电子消毒柜、化学药物消毒的分别为87.90%、61.15%、50.15%(P<0.01);有、无保洁措施的分别为80.86%、28.42%(P<0.01);碗、盘子、筷子、杯子分别为71.44%、71.89%、42.39%、29.66%(P<0.01)。[结论]离石区餐饮单位食(饮)具消毒合格率较低。 [Objective]To understand the status of tableware disinfection in catering units in Lishi district of Lvliang city,to strengthen tableware disinfection management in catering units.[Methods]Monitoring data of tableware disinfection of 4 286 tableware samples collected from 432 large,medium and small catering units in Lishi district in 2009 were analyzed.[Results]Of the 4 286 tableware samples tested,2 700 of them were up to standard with the qualified rate of 62.99%.The qualified rate of tableware samples was 82.05%,75.88% and 27.87% respectively in large,medium and small catering units (P〈0.01).The qualified rate was 87.90%,61.15% and 50.15% respectively with disinfection method of steam,electronic sterilized cabi and chemicals (P〈0.01).80.86% and 28.42% had and no sanitation and cleaning measures (P〈0.01).The qualified rate of bowl,plate,chopsticks and cup was 71.44%,71.89%,42.39% and 29.66% respectively(P〈0.01).[Conclusion]The qualified rate of tableware disinfection was lower in catering units in Lishi district.
