摘要
该文主要对糙米在贮藏过程中品质变化进行综述,包括如水分、脂肪酸、淀粉总量、过氧化氢酶和粘性等特性;同时介绍贮藏过程有害生物对糙米品质影响。
This paper overview the quality change of brown rice during storage,expatiate on the main quality changes of brown rice during storage,including the moisture content,fatty acid,overall starch, peroxidase and viscosity etc phyical and chemical properties.
