摘要
唾液酸是一组神经氨酸的衍生物,广泛存在于脊椎动物、哺乳动物及多种植物组织中,尤以在燕窝中含量最高,它能提高人体记忆力和智力水平,能提高人体免疫力,具有抗痴呆作用。唾液酸检测方法有比色法、荧光光度法、酶法、酶联免疫法、色谱法、毛细管电泳法,其中酶联免疫法(ELISA)适用于燕窝初级产品的初步鉴别,但有效性仍不足,结果只能作为参考。唾液酸检测不适合作为燕窝深加工产品的质量控制对象,针对燕窝特定蛋白建立的检测方法才是鉴别燕窝真假及测定加工产品中燕窝含量的有效途径。
Sialic acid is a group of neuraminic acid derivatives,which are widely distributed in vertebrate,mammal and many plant tissues,expecially in edible bird's nest.Sialic acids can improve the level of intelligence,memory and immunity of human with the ability of resisting senile dementia.The detection methods for sialic acids include colorimetry,fluorescence spectrometry,enzymatic method,enzyme linked immunosorbent assay(ELISA),chromatography,capillary electrophoresis.ELISA for sialic acids is adapted in primary detection of edible bird's nest,but its result is for reference only.Sialic acids content is not as appropriate index for quality control of processed products of edible bird's nest.The detection method for the characteristics protein in edible bird's nest is valid approach to identify the true or false of edible bird's nest and detect its content in processed products.
