摘要
为了充分了解生物技术在食品分析中的作用,对近年来在食品分析中出现的生物芯片、生物传感器、免疫技术和酶法分析等新的生物技术进行了综述,介绍了这些方法的基本原理、主要特点及在食品分析中的应用,认为生物技术检测方法以其自身独特的优势在食品分析中显示出巨大的应用潜能,其应用几乎涉及到食品分析的各个方面,尤其能对许多过去难以检测的成分进行分析。
In order to have a comprehensive understanding about the application of biotechnology in food analysis,this article carries out a literature review in biotechnology,including bio-chip,biosensor,immune technology,enzyme analysis etc.The basic principles,main properties of these technologies and their applications in food analysis are introduced.The article points out that these biotechnologies have huge application potentials because of their unique advantage,they can almost be applied in every field of food analysis,especially the analysis of the hard-detected food elements.
