双流县面制食品中铝污染的情况调查 被引量:4

Investigation on aluminum contamination of cooked wheaten food in Shuangliu County

摘要 目的:全面了解双流县面制食品中铝的污染情况,为食品卫生安全监督工作提供科学依据。方法:对双流县面制食品中铝按改进的铬天青S比色法进行检测,并对检测结果进行统计分析,再依据国家标准《食品中污染物限量》(GB2762-2005)面制食品中铝≤100 mg/kg进行判定。结果:抽检的32份面制食品样铝的合格率为68.8%,其中油条的合格率仅为25.0%,白馒头为63.6%,且油条的最高检出含量达到991.7 mg/kg,超出标准近10倍。结论:本县面制食品中铝含量超标情况严重,为确保人民群众的身体健康,有关部门应引起高度重视,进一步加强食品卫生安全监管力度。 Objective:Make a comprehensive understanding on aluminum contamination situation of cooked wheaten food in shuangliu county,to provide food safety supervision a scientific basis.Methods:Cooked wheaten food of aluminum in shuangliu county use the improved determination of Chromazurol-S colorimetric to detect and analyzed the results,and the national standard(Limits of contaminants in food,GB2762-2005) to determine,in which the limits of aluminum in cooked wheaten food was ≤100 mg/kg.Results:Sampling of 32 Cooked wheaten food,the pass rate was 68.8%,the pass rate of friedbreadstick was only 25.0%,and that of steamed bun was 63.6%.the maximum detectable quantity of aluminum in friedbreadstick was up to 991.7 mg/kg,it is approximately 10 times Beyond the limits of standard.Conclusion:Aluminum contamination of Cooked wheaten food in shuangliu county is in a serious condition.In order to ensure the people's health,the relevant departments should pay close attention to strengthen the supervision of food safety.
