摘要
本文研究了用废啤酒酵母为原料,采用自溶法提取酵母中的蛋白。发现添加质壁分离剂的量及自溶时间与提取率有显著关系。试验表明:质壁分离剂占体积比的7%,温度为55±1℃,时间为3h自溶效果最佳,可使酵母菌体中蛋白质的提取率达到12.2%,且氨基酸组成符合人体需要,特别是第一限制性氨基酸──赖氨酸含量较高。
The yeast protein was prepared from beer yeast by uslng autolysis. The results show that after 3h the autolytic effect could be the best when plasmolyticum was 7% under the temperature of 55℃ The extractive efficiency of protein could be 12. 2 %. The compositions of amino acids could meet the demands of human beings.
