摘要
本文归纳了国内外类胡萝卜素色素用于鲑鳟的研究，对鲑鳟类鱼肉着色的意义，着色剂的分类及作用，添加色素种类选择，影响着色效果的因素，添加着色剂成本及效益等进行了综述。
The purpose of this presentation is to review recent literature on carotenoid pigmentation in salmonid fishes, summarize Importance of pigmentation in salmonid fishes , pigment classification and function, Dietary pigment sources, influence factors on coloration, costs and benefits of coloration.
