摘要
鸡蛋是人类摄取蛋白质的重要食物之一。近年来对鸡蛋的研究主要集中在降低胆固醇,强化特定营养素等方面。而铁是人体的必需微量元素,也常用来强化鸡蛋营养。本文主要就蛋鸡养殖业的重要性,铁的生物化学功能及其在蛋鸡营养中的研究应用进行综述。
Egg is one of the foods that supplies people with the protein. Recently, the study on laying hens is focused mostly on decreasing cholesterol and increasing the special nutriton in egg,and so on. As we all know, iron is one of the necessary microelements to people nutrition, and it often is used to increasing the iron nutrition in egg. In this article, the importance of laying hens feeding, biochemical function and its studies and applications of iron will be summarized.
