摘要
本文简要对乳酸菌细菌素的定义、分类、影响乳酸菌活性因素、细菌素的应用以及存在的问题等方面进行综述。为其进一步研究及广泛的应用提供理论依据。
In this article, first, Lactic Acid Bacteria bacteriocin was introduced and classified. Activity of bacteriocin is influenced by various factors. Finally, the using and research direction of Lactic Acid Bacteria bacteriocin were simply summed up.
