摘要
以绞股蓝叶为主要原料,研究发酵型绞股蓝固体饮料的加工工艺,利用酵母菌、醋酸菌混合发酵,真空浓缩后,再与酸奶粉、甜味剂、酸味剂等调配,采用适当的固体饮料加工工艺,制成低热量具有保健作用的发酵固体饮料。
To use Extract of Gynostemma pentaphyllum Leaves and sugar as raw materials,fermented the extract with mixed yeast and acetate bacteria,After being concentrated at vacuum,then mixed with the yogurt power,functional sweetener and acid,The healthy solid fermented beverage with low calorie was made by processing technology of solid beverage.
