摘要
乳铁蛋白是一种具有多种生理功能的铁结合糖蛋白。阐述了乳铁蛋白的分子结构、促进铁吸收、调节免疫、抗茵、抗病毒、阻断氧自由基和促进双歧杆菌生长等生理功能,乳铁蛋白在乳品(尤其是婴幼儿食品)加工中具有广泛的应用,同时在饲料添加剂中也有相当的使用前景。
Lactoferrin is a kind of natural glucoprotein with multiple biological activities. This paper expounded the structure of lactoferrin, promoting the absorption of iron, immunoregulation, natural antibiotics, antiviral,antioxidant agent as well as promoting the growth of bifidobacteria et al. It is widely used in diary products especially infant formula, as the same time lactoferrin was tentatively used in feed additives.
