贵州核桃种仁脂肪酸和氨基酸含量分析 被引量:41

摘要 以贵州省赫章县3个乡镇的20个核桃优良单株种仁为试材,利用气相色谱仪和氨基酸分析仪,对核桃种仁中脂肪酸和氨基酸的组成及含量进行了系统研究。结果表明t贵州核桃不饱和脂肪酸总量为74.63%一91.45%,20个单株的平均含量为88.47%,其中多不饱和脂肪酸(PUFA)占45%一75%,n-6(PUFA)/n-3(PUFA)为(7.20一15.42):1,SFA:MFA:PUFA为1:(0.57~5.21):(2.39~9.59),具有SFA含量低、PuFA含量高的特点,属于亚麻酸类油脂;贵州核桃种仁中富含17种氨基酸,其中Arg、Glu和Asp含量较高;含有人体10种必需氨基酸(EAA)中的9种,EAA/T从为49.04%~55.85%,20个单株的平均含量为52.24%。表明,贵州核桃蛋白质中氨基酸含量平衡,是一种优质蛋白质。 The composition and content of fatty acids and amino acids content of walnut kernels of 20 quality walnut plants from 3 villages of Hczhang county were analyzed and determined systematically to know the characteristics and nutritional value. The results showed that the to- tal unsaturated fatty acids content was 74.63 % - 91.45 % and the average unsaturated fatty acids content was 88.47 %, the polyunsaturat- ed fatty acids accounted for 45 % - 75 % , the ratio of n-6 PUFA/n-3 PUFA and SFA: MFA: PUFA was 7.20 - 15.42:1 and 1 : 0.57 - 5.21 :2.39 -9.59 ,respectively. The fatty acids with lower SFA and high PUFA content in walnut kernels belonged to linolenic acid type. The walnut kernel was rich in 17 amino acids. The Arg, Glu and Asp content was high and there was 9 kinds of human essential amino acids. The ratio of essential amino acids/total amino acids was 49.04 % - 55.85 % and the average ratio Of essential amino acids/total amino acids was 52.24 % ,which demonstrated the protein with balance amino acids content in walnut kernels was a quality protein.
