摘要
养殖银鲑鱼肉富含不饱和脂肪酸(DHA和EPA),具有较高营养价值和健康保健功效。本文以养殖银鲑为原料,依托现代中西菜肴制作技术及工艺,经过大量试验,寻找出养殖银鲑鱼肉的烹饪特性,研发了一系列适合中国人口味特点且营养、健康的银鲑美食菜肴。
Aquatic-bred salmon is rich in unsaturated fatty acid, such as DHA and EPA, which is nutritious and good for the health. Trough a number of experiments employing Chinese and western cuisine technology, the pa- per presents the culinary features of bred salmon and a series of salmon dishes that are both healthy and cater for the Chinese＇ s appetite.
