Agricultural produce market falls into low efficiency equilibrium of food quality and safety under the influence of ＂Lemons＂ problem. It is necessary that ＂Lemons＂ problem existing in agricultural produce market should be resolved to promote transformation of the market equilibrium from low efficiency of food quality and safety to high efficiency of food quality and safety. This paper attempts to give a systematic summary on the ＂Lemons＂ problem existing in agricultural produce market and its countermeasures from the perspective of food quality and safety, and corresponding research prospects are put forward.
