摘要
用醋酸纤维素薄膜电泳分析鹅蛋清蛋白,电泳结果表明,鹅蛋清蛋白中含有5种蛋白质,这些蛋白质的等电点均小于pH值8.6,其相对含量从负极端到正极端依次为12.65%、10.15%、18.05%、44.93%、14.23%。
The goose egg albumin components were analyzed by cellulose acetate fiber electrophoresis ,the result indicated that there were 5 kinds of proteins in goose egg albumin,which isoelectric point was less than pH8.6. The relative contents of these proteins were 12.65%, 10.15%, 18.05% ,44.93%, 14.23% respectively from negative to positive pole.
