摘要
针对市场上常见的"三精一水"红酒造假现象,研制了一种便携式的红酒检测仪,通过检测红酒样品的吸光度在不同pH值条件下的变化,来现场快速判断样品中是否含有人工色素以辨别其真伪。其检测原理是天然色素的最大吸收峰会随着pH值改变而迁移,而人工色素则相对稳定。通过实验确定检测波长为530nm和600nm。本文介绍了该仪器的硬件结构和系统设计。该仪器结构小巧、紧凑,内部无可移动部件,检测速度快,操作简便,能够对市场上常见的勾兑葡萄酒进行检测。
Blending alcohol,saccharin and flavor into red wine is very common in the market.Aiming at this phenomenon,a novel portable wine detector was developed.It determines whether the wine samples contain artificial colors to further distinguish the authenticity of them by detecting the changes of absorbance of samples after adding the NaOH solution.The detection principle is the peak spectral response of natural pigment changes with pH,while the artificial colors are relatively stable.The detection wavelength was identified as the 530nm and 600nm through experiments.This article describes the instrument’s hardware architecture and system design.The instrument is compact, test speed,easy to operate and no moving parts inside,capable of detecting blending wines on the market.
