摘要
《齐民要术》是现存最为完整的中国古代农学巨著之一,主要记载了我国古代劳动人民在日常生产实践中所积累的经验.对《齐民要术》所记载的酿造(酿酒、酿醋、作鼓、作酱)过程中所使用的植物资源(主要为酿造用植物原料、特殊的添加物、酿造过程的物候指示植物)和传统知识进行了整理,从而为进一步研究《齐民要术》的科学价值提供基础资料.
Qi Min Yao Shu,a famous ancient book in China,recorded the experiences and knowledge on agriculture in ancient China.The methods and related knowledge had been introduced in Volume 7 and 8 in this book.Plant resources were mainly used as raw materials,addictives,and climate indicators during brewage.The traditional knowledge of plants used for brewage recorded in this book has been documented for providing basic information for further studying the scientific values of this book in this paper.
