肌纤维类型与肉质关系 被引量:8

摘要 肌纤维类型是造成肉质多样性的一个重要因素,其组成与分布对肉品品质有着决定性的影响,通过调节肌纤维类型的组成与分化来改善肉质是一条安全、有效的途径。文章对肌纤维的分类、不同类型肌纤维的特征、肌纤维与肉质的关系及亟待解决的问题等方面作一综述。
