摘要
1.前言 用酶促水解工艺制备水解明胶,虽然具有反应条件温和、节能、无污染、过程便于控制、产品性能比较稳定等一系列优点,但仍存在一些问题有待改进。例如,制作水解明胶使用的原料胶系高档明胶;水解过程中酶的使用只是一次性的;水解产物为单一品种,尚未构成系列产品等。 为提高水解明胶的技术经济效益。
In this paper .decolorizing and deodorizing technique by charcoal introduced into the hydrolysis technolo-gy for animal bone glue was studied systematically. The technical characteristics of the hydrolysate from the bone glue were compared with those of the hydrolysate from bone gelation. Proteinaze-papain immobilized and given a trial to the process of gelatin hydrolysis. their biological activities were observed through deter-mining molecalar weight(MW) and distribution(MWD) of the hydrolyzates. The principle to form gelatin hy-drolyzates in series were discussed according to the measured MW and MWD of product samples.As a result of experimental data, it was concluded that gelatin hydrolysis technology can be improved in increasing technical economic benefit by using charcoal decolorizing and deodorizing technique, and immobiliz-ing proteinaze as well as informing hydrolyzates in series.
