摘要 研究了微胶囊化过程中明胶的单凝聚,系统地考察了各种因素,如明胶浓度、油胶比、冷凝时间和固化时间等对微胶囊产率、包覆效率的影响,得到了微胶囊化的最佳条件;重点研究了不同凝冻速度的明胶对其微胶囊化过程的影响,证实了明胶的凝冻速度对其微胶囊化过程有重要影响,各种明胶都有自己适宜的冷凝时间;凝冻速度居中或偏慢的明胶更适宜于制备微胶囊,所得结果对选择微囊化所使用的明胶具有一定指导意义。 The simple coacervation of gelatin in the microencapsulation process was investi-gated in this paper. The influence of different technological conditions, including the concen-tration of gelatin, the ratio of gelatin to the solution of Vitamin E,the time of gelation, as well as the hardening time on the yield of microcapsule, the efficiency of microencapsulation, was studied, respectively. The microencapsulation conditions were also optimized. It was found that the gelation time of the gelatin has a great effect on its microencapsulation pro-cess, each gelatin has its own most fitting gelation time for getting high yield of the microcap-sule and good encapsulated efficiency. The experimental results may be helpful to select gelatin for microencapsulation.
