摘要
采用光散射技术研制一种用于豆制品或者奶制品生产过程中现场连续监测蛋白质凝结过程的新型传感器。在分析生产过程中溶液与反射光强的关系基础上,建立了数学关系模型。利用设计的传感器模仿现场环境进行了实验,实验结果表明:光反射系数与平均分子量比值与蛋白质凝结过程有对应关系,可以开发新型蛋白质凝结传感器。
A novel light backscatter sensor is developed for continuous on-line monitoring of coagulation and syneresis to improve control level in milk production process or soybean production process. A math relation model was employed to study the effects of the macromolecules and the scattered light on production making parameters. The characteristics of light backscatter sensor was studied by experiment simulating production condition. The result showed that the light backscatter ratio and the average molecular weight ratio is the main factor of affecting protein coagulation process. The proposed technology shows potential for novel protein coagulation sensor developing and on-line monitoring.
