水提紫甘薯色素废渣营养成分分析与评价 被引量:12

摘要 采用国家标准分析方法检测水提紫甘薯色素废渣营养成分。实验结果表明:水提紫甘薯色素废渣含蛋白质62mg/g,粗纤维26mg/g,粗脂肪4mg/g,属于高纤维低脂肪食品;含有17种氨基酸,其中必需氨基酸含量25.90mg/g,占总氨基酸的44%;含有5种脂肪酸,其中饱和脂肪酸占16.55%,单不饱和脂肪酸占43.75%,多不饱和脂肪酸占39.70%;维生素C含量高达0.63mg/g;富含钙,含量为2.10mg/g。水提紫甘薯色素废渣具有极高的开发利用价值。 The nutrient composition oflpamoea batatas L. residue after pigment extraction was analyzed by National standards analytical methods. The results indicated that the waste residue was a low-fat and high-fiber food, containing protein 62 mg/g, crude fiber 26 mg/g, and crude fat 4 mg/g. It contained 17 kinds of amino acids, among which essential amino acid content reached 25.90 mg/g and was 44% of total amino acids. Among the 5 kinds of fatty acids determined in the residues, contents of saturated fatty acids, mono-unsamrated fatty acids and polyunsaturated fatty acids were of 16.55%, 43,75%, and 39.70%, respectively. Vitamin C content in Ipamoea batatas U residue was as high as 0.63 mg/g. The Ipamoea batatas L. residue was also rich in calcium (2.10 mg/g). The Ipamoea batatas L. residue proved to be worthy of development and utilization.
