野生毛葡萄常规营养成分和原花青素含量分析 被引量:21

摘要 对湖南南岳产的野生毛葡萄原花青素含量和常规营养成分进行分析。结果显示,原花青素在0~0.4mg/mL范围内呈线性关系,线性回归方程为A=2.08C-0.016,测得野生毛葡萄子籽原花青素、野生毛葡萄皮原花青素含量分别是:85.54mg/g、68.75mg/g;新鲜野生毛葡萄:蛋白质0.90%,粗脂肪2.60%,粗纤维6.90%,灰分2.0%,VC100.88mg/100g,还原糖10.57%,水分68.02%,钙4.68mg/g,钾1.05mg/g,镁0.757mg/g,铁0.103mg/g,亚油酸42.70g/100g,亚麻酸452.37g/100g,油酸2025.44g/100g,棕榈酸705.23g/100g,组氨酸711.6mg/100g,苏氨酸496.9mg/100g,缬氨酸542.8mg/100g,蛋氨酸60.9mg/100g,赖氨酸287.2mg/100g,异亮氨酸272.0mg/100g,亮氨酸76.6mg/100g,苯丙氨酸216.2mg/100g,色氨酸254.7mg/100g。与其他品种相比原花青素含量和常规营养成分含量存在一定差异。 The proanthocynaidins and routine nutritive components contained in Vitis quinquangularis Rehd. Were determined, gathered from Heng mountain Hu-nan province. The results showed that: A good linear correlation was found in the range of 0~0.4 mg/L of proanthocynaidins, the proanthocynaidins content of Vitis quinquangularis Rehd. seeds and Vitis quinquangularis Rehd. peel were 85.54 mg/g and 68.75 mg/g. The contents of routine nutritive components in the fresh Vitis quinquangularis Rehd. were as follows: 0.9% of protein, 2.6% of crude fat,6.9% of crude fiber, 2.0% of ash, 100.88 mg/100 g of vitamin C, 10.57% of reducing sugar, 78.0% of water, 4.68mg/g of Ca, K of 1.05 mg/g, 0.757 mg/g of Mg, 0.103 mg/g of Fe, 42.70 mg/100 g of linoleic acid, 452.37 mg/100 g of linolenic acid, 2 025.44 mg/100 g of oleic acid,705.23 mg/100 g of palmitic acid, 711.6 mg/100 g of His, 496.9 mg/100 g of Thr, 542.8 mg/100 g of Val, 60.9 mg/100 g of Met, 287.2 mg/100 g of Lys, 272.0 mg/100 g of Ile, 76.6 mg/100 g of Leu, 216.2 mg/100 g of Phe, 254.7 mg/100 g of Try. The determination showed that there were differences in contents of proanthocynaidins contents and nutritive components among other varieties.
